1 whole duck foie gras
4 varieties of salad
200g cooked runner beans
handful of cherry tomatoes
olive oil and sherry vinegar dressing
salt
pepper mill
chives
Method
Dress a bed of mixed salad on each plate. Add a little dressing. Place 2 or 3 thin slices of foie gras en each bed of salad.
Make small bundles of runner beans, tied up with a sprig of chives. A turn of the pepper mill on the foie gras.
Decorate with cherry tomatoes.
A refined first course that is quick and easy to prepare.
